Chocolate Beet Cake
4 oz unsweetened chocolate
1 c mild flavored vegetable oil, divided
1 3/4 c sugar
2 c cooked, pureed beets
1 Tbs vanilla extract
2 c all purpose flour, sifted (or not, if you're making for a Stake event)
2 tsp baking soda
1/4 tsp salt
Preheat oven to 375 degrees. Lightly grease your pan (two 9" pans will make a two layer cake).
Partially fill the bottom of a double boiler with water, and bring to a simmer. Put the chocolate and 1/4 c oil into the top of the boiler, heating until the chocolate & oil melt.
Sift together all dry ingredients in a separate bowl.
Break the eggs into a large bowl and add the sugar. Beat together with an electric mixer until fluffy. Slowly beat in the remaining 3/4 c oil. Beat in the pureed beets, followed by the chocolate mixture and vanilla.
Stir in the flour mixture just until combined. Pour batter into a prepared pan.
Bake until a toothpick comes out clean. Remove and set on a wire rack to cool.
You can top with raspberry sauce and whipped cream, or a chocolate glaze, or icing, or....
